Hands-on Appetizers Class and 'Be a Sommelier' Wine Seminar

This session is ideal for group between 25 and 56 people. It starts with an optional vineyard and winery tour before the group divides into two sections.

One group moves into the Wine Country Cooking School's hands-on kitchen and will work in teams to prepare a variety of appetizers for the next two hours. Typical recipes include Fresh Vegetable Rolls with Peanut Sauce, Asparagus Pesto, Peach Chutney with Old Cheddar, and Crostini with Goat Cheese and Oven Roasted Tomatoes.

The other group goes into the classroom for a session that kicks off with a 'blind sniffing' exercise - a chance to discover how your palate stacks up in identifying common aromas found in wine. Next up is a review of the Aroma Wheel and the fundamentals of developing a wine vocabulary. And it's all put into practice with a tutored tasting of different varietals, vintages and styles of wine.

Then it's time for both sections of the group to get back together and enjoy the appetizers matched with fine Strewn wines. Depending on the time of the year and the time of day, participants may enjoy a private tasting in the cellar, out on the lawn or in the Tasting Room. Appetizer and wine reception lasts 30 to 45 minutes.

Option: groups can rotate and participate in both activities (8 different appetizers will be prepared in total - 4 per session) in a slightly shortened format; there will be a 15 minute break in between sessions; reception takes place at the end of the rotation.
