Spring at the School

Spring is well underway in Niagara, the forsythia and magnolia are blooming and the first of the fresh fruits and vegetables will be available within the next few weeks

Right now the herb garden by our patio is due for a spring clean-up. The winter cold has damaged the sage and sorrel, which may have to be replaced, However the chives are tall enough to cut for a garnish and parsley has popped up throughout the bed.

Two years ago our gardener Michelle planted oregano, chives, and parsley in sunken pots and it’s time to decide whether to add more pots of perrenial herbs or go back to a free-form bed.

One item on the wish list is creating a kitchen garden with raised garden beds. The concrete floor already exists and the plan is to build and plant two beds as a pilot project. We’ll keep you informed of the progress!

New Recipes and Menus

In the 20+ years the Wine Country Cooking School has offered hands-on classes, we have never posted menus in advance. There are two reasons for this. The first is our commitment to cook local, which means flexibility in timing to when products are or are not available. The second reason,is our willingness to accommodate dietary issues when possible. It has become increasing common for gluten and lactose intolerance to be identified during registration (this is also your chance to indicate any foods you do not eat or really dislike).

Over the winter I collect ideas for new recipes and menus and have started testing rhubarb and asparagus recipes for the May classes plus a few ideas for the outdoor barbecues. There are still spaces available in the classes on May 11 and May 18; to book follow this link.

New Online Booking System

You may have noticed that booking classes online looks a little different this year. Start by choosing a day class (first three Saturdays of the month) or an evening class (fourth Saturday) and then choose your date from the calendar that appears. We had many requests for a way to let users customize gift certificates for cooking classes. Our new booking partner, Bookeo, has a great feature that lets you design your own gift voucher, even incorporating photos we’ve supplied or uploading your own images.

What else is new? Over the winter break, we freshened up the cooking school with new paint and added some updated cooking equipment and you’ll see even more changes at the winery as a whole. We look forward to showing it all to you in person!
